Cucumber Salad with Avocado Dressing and Crispy Dulse

Serves 3

2 medium cucumbers, thinly sliced
½ tsp. Ground cumin
½ Cup dulse, ripped into pieces
½ TBS. Olive oil
½ medium ripe avocado
1 TBS. Fresh lemon juice
1 clove garlic, minced
2 TBS. Water
2 TBS. Fresh cilantro, chopped
Sea salt and freshly ground pepper

  1. For Avocado Dressing: Place avocado, lemon juice, cumin, garlic, water and cilantro into a blender. Blend well until smooth and creamy. Season with salt and fresh pepper to taste.
  2. For Crispy Dulse: Heat olive oil in a skillet over medium-low heat. Add dulse and stir constantly until it changes to a darker color turns crisp (around 30 seconds or so). Remove from the saucepan, transfer to a dish and set aside, allowing dulse to cool.
  3. Put sliced cucumbers into a serving bowl, pour in avocado dressing, tossing well to coat. Serve individual portions garnished with crispy dulse.
