Diner Garden Salad with Vegan Chunky “Bleu Cheese”

Serves 4

This salad with the creamy “bleu cheese” dressing will cure any cravings you might have for a tangy, rich salad. This might remind you of simple diner fare, but much healthier for you!

1 head romaine lettuce, washed, dried and chopped
2 Cups of cooked garbanzo beans, (or one can 15oz size, drained and rinsed)
½ Cucumber, cut into slices
1 large tomato, chopped
½ large red onion, thinly sliced
1 Cup whole grain vegan croutons, optional
1 recipe vegan chunky bleu cheese dressing

1. Toss all ingredients into a large salad bowl. Serve chunky “bleu cheese” on the side, or use ½ Cup of the dressing and toss well with the salad ingredients until well coated. Serve immediately.
