Spicy Sautéed Greens

Serves 4

Greens are some of the most important foods you should add to your diet and eat on a regular basis. This recipe is simple and showcases their wonderful taste.

1 pound kale (you could substitute chard, collards, or spinach) washed well, dried and chopped
¼ Cup Extra virgin olive oil
2 cloves garlic, minced
1 tsp. Hot pepper flakes
Salt to taste

  1. Heat olive oil over medium heat in a large saucepan. Add the garlic and red pepper flakes, and sauté until garlic is golden, being careful not to burn.
  2. Add the chopped kale or greens and the salt. Stir several times to coat the kale with the oil. Cook until kale is tender and bright green. Taste and adjust seasoning, if necessary. Serve immediately.
